We proudly stock a selection of Lindores Abbey whisky, a single malt Scotch with one of the richest histories in whisky, despite being less than ten years old (at the time of writing)!
Since production began, Lindores Abbey has released an array of exciting core and exclusive bottlings, using a fascinating variety of cask types that highlight the diversity of their fruity spirit. Their core MCDXCIV (1494) Single Malt has sweet floral notes balanced with subtle spice, orchard fruits and toffee.
Founded by Drew and Helen McKenzie Smith, the modern Lindores Abbey Distillery opened its doors in 2017 on the outskirts of Newburgh in Fife, and started distilling whisky in December of that year. With a capacity of 150,000 litres of spirit a year, it’s quickly made a name for itself.
Lindores Abbey is a pilgrimage for Scotch whisky lovers and spirits geeks - it’s the site of the first recorded production of Aqua Vitae in Scotland, making it a key piece of Scotch whisky history.
Lindores Abbey Distillery
The Scotch whisky story has to start somewhere. The 'history bit' of a tasting, article or book needs a date, and once you get past all the vague guesswork of who invented distillation and who started distilling barley first, the first year that tends to get mentioned is 1494.
Friar John Cor was given permission by King James IV to distil spirit from barley; "To Brother John Cor, by order of the King, to make aqua vitae VIII bolls of malt". Eight 'bolls' is equivalent to nearly 500 kgs which could have made enough spirit to fill a decent-sized cask, but we don't know whether its purpose was as a medicine or as a drink.
Lindores themselves also don't know if Friar John produced the distillation at their abbey, but they have undertaken extensive archaeology on the grounds and discovered a still bed alongside a granary and bakery. Although there are actually earlier written indications of the distillation of cereal spirits in existence, this 1494 reference is the firmest written evidence, and its status is now semi-sacred, and the legitimacy, gravitas and baked-in heritage it gives to modern Lindores Abbey is significant.
Drew and Helen Mackenzie Smith have done a wonderful thing in linking back the distant past to our present day, and they are doing this with an easy charm. The modern distillery is a lovely place to visit.
The Mackenzie Smith family have already built up a community around them, with special dinners, weddings and workshops among the regular events before 2020 hit. Their production goal is to make a soft and creamy spirit in the Lowland style with little peat and long and gentle fermentations. They have built dunnage warehouses for maturation, which is largely traditional, although they have also experimented with heated warehousing to increase the rate of maturation. We cannot wait to taste the results of the 21st Century Lindores Abbey.
