From farm to dram
A true farm distillery, Daftmill grows its own barley and produces spirit in only two seasons (midsummer and winter) every year due to the needs of the farm. It's house style is typically malty with floral and lemon characters harking back to a true Lowland style.

The Cuthbert family have been growing barley for malting in Fife for over six generations. They were tenants at Dafmill before buying the farm outright in 1984 and are quite possibly the third family to have owned the land in 1000 years. Brothers Francis and Ian applied for planning permission in 2003 to convert their old Napoleonic mill building into a distillery and on St Andrews Day 2005, they were granted license to distill with production commencing on 16th December 2005 when they distilled their first spirit and filled it into casks.
The Cuthberts already grow barley for large distilleries in Speyside and managed to divert some of their own produce to be malted and then brought back to the farm to for distillation. They grew Chariot barley in 2005 and 2006 and subsequently moved to Optic, Publican, Concerto and Laureate. They fill typically 100 casks a year with most being bourbon casks from Heaven Hill Distillery however they do fill a small amount of sherry casks.
For years, drinkers have been waiting patiently to try an official bottle as Francis waited patiently and carefully to chose the right time for the spirits unveiling. After partnering with Berry Bros & Rudd as distributors, the first Inaugural Release was launched in 2018 with subsequent Summer and Winter releases following shortly after.

We’ve had some great bottlings from this distillery over the years, like the Daftmill 2009
13-Year-Old UK Exclusive Oloroso Butt #26, a single cask whisky showcases the farm’s very own Optic barley. It leaves a pleasantly malty, plum-forward taste with toasted chestnuts and creamy milk chocolate at its core.
