Dating back to 1798, Highland Park, is situated on the outskirts of Kirkwall. It is the Northern-most distillery in Scotland and often described as a fantastic 'all rounder' as it has a little of everything. The distillery's pagoda-roofed chimneys are put to good use, as Highland Park cuts its own peat which it uses for malting a proportion of the barley used for production on the premises.
The peat on Orkney is different, having very little wood content. Orkney is a windy place with few trees, and a fair bit of resilient, determined heather that must lay its roots deep if it wants to cling on. This gives Highland Park a unique feel and texture.
Another advantage if ageing your whisky on Orkney is the consistent temperature. This allows the whisky to slowly gain character whilst also gaining influence from the surrounding climate.
