Akashi Tai produce high quality sake, and have done for nearly 100 years. Daiginjo has to be less than 50% milled, which produces a very fruity sake. Akashi have gone a little further, leaving only 40% of the rice kernels after milling. The more you mill the sake, the lighter it becomes, so this sake is very full flavoured. It is a sake that has quite a broad appeal. it would be a good gift for someone just getting in to sake.

Tasting Notes

Staff tasting Notes
Nose: A clean blossomy note erupts with sharp apple leading to more gentle floral notes and a touch of fruit flesh.
Palate: More apple comes on the palate, with gooseberry flavours running just behind. A small acidity lingers and a little salty note punches through at times.
