Islay Whisky

Islay, like Speyside, is a mecca for whisky lovers. There are numerous distilleries squeezed onto the island; Ardbeg, Lagavulin, Caol Ila and Laphroaig to name but a few. Taking their smoky flavour from the peat fuel used for malting the barley used in producing their whiskies, Islay malts are often described as being smoky and medicinal, salty and 'seaweedy'.

Distilled in September 2007, this unpeatead Islay malt was matured for 11 years including a finish in Port Pipes.
A single cask from of one Islay's gentler distilleries in terms of style. Bottled in July 2019 from hogshead 7727 it is a run of just 252 bottles.
A unique limited edition whisky from Islay. This single malt was matured in oloroso sherry casks from almost all of its life, before finishing its maturation for around two years in PX casks.
A 30 year old Bunnahabhain matured in a sherry puncheon, distilled in 1988 and bottled 2018 by Wemyss Malts with only 612 bottles produced.
After distillation on 22nd November 1997, and 19 years maturation in traditional bourbon casks, this whisky was specially selected to be finished for almost two years in Palo Cortado sherry casks.
Bunnahabhain is usually thought of as the gentle dram of Islay, but not so here.
An old style bottling from the days just before the increased the strength to 46.3% While that was a good move in our eyes, it would be interesting to taste this again.

First distilled in 2011, this limited release Caol Ila has been matured and bottled by the whisky brains at Signatory Vintage.
