Whisky Liqueur

Scotch whisky hasn't always been the refined, aged spirit it is today.

There was a time when the distillers simply wanted to make a strong spirit that was drunk very young. This 'uisge beatha' (or water of life) was often too strong to be enjoyed and was combined with things such as honey or heather to make it more palatable. It's thought this is where whisky liqueurs were born.

Nowadays there is a lot more that goes into the making of a liqueur than just adding spirit to something sweet. By law a liqueur must be spirit based and have at least 100g of sugar per litre but apart from that it doesn't have restrictions like many other drinks categories. Typically companies use the addition of fruit and spices to create their own drink, and often these recipes have been closely guarded secrets passed down through generations.

Traditionally liqueurs have been seen as an after dinner drink, but with the resurgence of cocktail bars in recent years their importance as a cocktail ingredients has increased, and many new products have been developed with this in mind. It's come a long way from its humble beginnings.
