Single Malt Whiskey

Single malt whiskey shows just how similar Scottish and Irish whiskey are. Irish single malt can only be made with barley, water and yeast. It has to be distilled in copper pot stills and aged, in oak, for at least three years.

 

In fact the only real difference between the single malts comes down to the number of distillations. The Scots tend towards two runs through the stills, whereas for a long time three distillations were more common in Ireland.

 

This third distillation makes a lighter, fresher spirit free from some of the heavier flavours that are hallmarks of Scotch whisky. Another difference between there two styles is that Irish whisky makers will almost never use peat when producing their spirits. We have to say "almost" because there are always a few distillers out there who like to do their own thing and this has led to a small number of peated Irish malts.

 

With their smooth flavours and light bodied nature Irish Single Malts are becoming more and more popular around the world. It's just as well the there are so many new distilleries starting up in Ireland to fill the demand.
