Irish Whiskey

It's a bitter pill to swallow for the Scots but history points to the Irish being the first nation to distil whiskey. They even have the historical records to back it up.

 

It was in 1405 that whiskey production was first noted in Ireland, which is a solid 89 years before it was recorded in Scotland. However, it is thought that Irish distilling may go as far back as to the 6th century.

 

The first licence to distil whiskey in Ireland was granted in 1608, however Bushmills did not actually distil whiskey on the site until 1748. Irish distillers continued to produce their popular spirit and right up until the late 19th century it was one of the most popular spirits in the world. Unfortunately a combination of worldwide warfare, changing tastes and failing to embrace new technologies led to a rough time for Irish distillers. In the 1970s only two distilleries remained working in Ireland - and they were owned by the same company (Irish Distillers).

 

In the late 1980's the Irish distilling resurgence began with new ownership for Irish distillers and John Teeling starting a new distillery in Cooley. The world once again embraced the smooth, sweet flavour of Irish whiskey. Within the next few years we could see as many as 32 distilleries producing whiskey on the Emerald Isle.
