Irish whiskey is in the middle of a resurgence at the moment, but things weren't always so rosy. In fact Dingle distillery was the first purpose built whiskey making facility built in Ireland in over a century. The fourth batch of their single malt is matured in a combination of Bourbon, Sherry and Port casks and vatted together to create a full flavoured whiskey harmoniously balanced between vanilla sweetness from American Oak, and dried fruit flavours from fortified wines.
