Brandy

Brandy is a distillation of wine or fermented fruit juice. It is most commonly associated with grapes, but other base juices can be used.

 

Some of the most renowned brandies in the world come from Cognac and Armagnac, in the South West of France, but a variety of styles are made throughout the world. Because of the strong connection with grapes, production is largely in the same regions that make wine.

 

Once the base wine has been distilled, the spirit is then aged in oak casks to mature and develop more complex flavours. Each country and region has its own particular style and rule set to adhere to. Many countries set minimum lengths of maturation for the spirit, but it is also common to use sugar and caramel colouring to give the appearance of extra age.

 

Brandies that do not use grapes are often called things like fruit brandy, apple brandy, or if it is made using the leftover pulp (or must) from grapes, it is known as Grappa. The non grape-based spirits can also be called Eau-de-Vie. Countries like the USA insist on these terms being used for anything that is not exclusively made from grapes.

 

Frequently, brandies display classifications such as V.S, VSOP and XO. These mark the length of time the brandy has been aged for. In Spain, Brandy de Jerez uses a different classification set to accommodate the Solera ageing system. However, outside of Cognac, Armagnac and Jerez, these classifications are not regulated, so are sometimes used to discern a particular brand's premium products over their entry level brandy, without any direct reference to a particular age or quality standard.
