Millet, for the uninitiated, is a cereal that tends to grow in hotter climates that don't have the most fertile soil. It has been fermented to make alcoholic drinks for a long time in Africa and Asia but recently we've noticed whiskey being made with it in the United States.
Millet whiskies are still very much an emerging style but we're very impressed by what we've tried so far and we hope to see more in the future.
So far the only people that we've seen making whiskey with millet is the independent Chicago based distillery Koval. Everything at their distillery is made by hand and they are very proud to produce organic whiskies.
With millet now being used to make whiskey it does makes us wonder what other untapped ingredients are out there that could form the base of the next great spirit.
