Ailsa Bay v1.1

Ailsa Bay distillery has been tucked away in William Grant's Girvan complex since 2007 but it was only released as a single malt in early 2016. A very unusual whisky in a variety of ways. A lowland whisky with a peaty feel Ailsa Bay defies the norm but that's not it's only quirk. Ailsa Bay also undergoes 'micro-maturation' where it is initially matured in very small bourbon barrels that have been used to craft Hudson whiskey before being moved to a larger, standard barrel to finish it off. This 'reverse finishing' has given the whisky a unique sweetness. We've been seriously impressed with what we've seen so far from Ailsa Bay.
Staff Tasting Notes


Nose: Slight sweet smoke, like smoke infused with marzipan and vanilla. Herbal tea aromas and pear/lime notes.


Palate: Spicy initial palate, charred wood notes, lemony notes, red apples and a full campfire smoke finish with BBQ notes coming through with a bit of time. A remarkably long finish, which makes it a dram you could really enjoy sitting with.


Official Tasting Notes


Nose: Intense, smoky phenolic note but balanced with creamy, honeyed sweetness. Then...smoky bacon!


Palate: Zingy, peaty kick layered with beautiful sweetness. A meaty character too – crispy rasher with a hint of maple syrup.


Finish: Goes on forever. Again balance of smoke and sweet, savoury but candied spice notes – due to the Oak casks (vanilla) and Hudson (oily, syrupy, sweet).
